As a small child, I helped both my mother and my grandmother make these easy refrigerator pickles. They were a staple in our summer kitchen and how I loved to eat them! I now make them for my own children and summer just wouldn’t be the same without them.
These heirloom pickles are easy to prepare, healthy for you, and they taste delicious. (Three of my favorite qualities in a recipe!) Best of all, this recipe requires no cooking and will last up to three months in the refrigerator.
I make a crock full of pickles and then keep adding freshly cut cucumbers from the garden as summer goes along. It couldn’t be simpler. If you’d like to make a bigger batch, simply double or triple the recipe as needed.
My Grandmother’s No-Cook Easy Refrigerator Pickles
3 cups sliced cucumbers
3 small onions, sliced thin
1 cup white vinegar
1 cup granulated sugar
1 cup water
1 teaspoon salt
1-2 teaspoons celery seed or pickle spices
Slice cucumber and onions and place in a large container, crock, or bowl. In a separate bowl mix vinegar, sugar, water, and salt together until dissolved. Add in celery seed or pickle spices if desired. Pour vinegar mixture over the cucumber and onions. Cover and place in refrigerator.
Add more fresh chopped pickles and onions to the mixture as needed. You may need to add more of the liquid mixture as cucumber season goes on.
Stores for up to three months in the refrigerator. Eat and enjoy often!
