Black Beauty Eggplant Seeds History

As one of the most popular cultivars, Black Beauty eggplant info abounds. Dating back to the early 1900s, this variety of open-pollinated and heirloom eggplant has been a favorite for vegetable gardeners throughout decades. When picked at peak maturity, these large glossy fruits offer impressive yields. Early to mature, Black Beauty eggplants are a well-suited option for those with shorter growing seasons. Additionally, compact and upright plants make them an ideal candidate for container culture.

How To Grow Black Beauty Eggplant Seeds

Give eggplants a head start on the growing season by starting them indoors, six to nine weeks before the average last frost. Soak seeds overnight to encourage germination; sow them ¼ inch deep in a loose, fine medium, such as vermiculite. Use bottom heat to maintain a soil temperature of 80 to 90 degrees for the eight to 10 days required for sprouting. Transplant seedlings to individual pots once they reach 3 inches. When outside nighttime air temperatures are above 50 degrees, gradually expose them to the outdoors to harden them off. Keep transplanting your seedlings into larger pots as you wait for both outdoor air and soil to warm up to at least 70 degrees.

Preserving And Storing Eggplants

Can an eggplant be frozen for future use? ABSOLUTELY, and with no loss of flavor!

  1. Slice the eggplant into 1/4″ slices.
  2. Lightly salt to remove bitterness.
  3. Blanch in boiling water for 5 minutes, then chill in an ice bath. (freezing eggplant without blanching is not recommended, as it can get tough.)
  4. Lay slices on a cookie sheet in a single layer.
  5. Flash freeze for 4-6 hours, and then place in ziploc bags.
