Ruby King Pepper Introduced by Maule’s Seed Company in 1902. Claimed to be the best of all peppers, never to be replaced. We agree over 100 years later, this is consistently one of the best bell peppers in our trials.

Ruby King Pepper History

we now consider the Ruby King an heirloom variety. According to several companies selling the pepper, it was first introduced in 1902. However, the American Garden: Illustrated Journal of Horticulture described the Ruby King in 1885. The American Garden writer explained that with the introduction of milder yellow peppers, people seemed to have “developed a taste for less pungency in this fiery vegetable.” This critic was not a fan of the yellow pepper, stating emphatically that “it cannot be denied that the correct color in a pepper seems to be red.” The only vegetable that fit the bill as both mild in taste and red in color was “Burpee’s Ruby King, now introduced by W. Atlee Burpee.” The writer called it a “a respectable Pepper . . . mild and pleasant to taste — unequaled, in this respect, by any other variety.

Growing Ruby King Peppers

Peppers like warmth, so wait to plant until nighttime temperatures have consistently reached 60 degrees and all danger of frost has passed. If possible, set out your peppers on a cloudy day to help reduce stress on the plants. Space the plants 12 to 20 inches apart, depending on the mature size of the variety, and set them a bit deeper than they were in their containers. (Like tomatoes, peppers grow extra roots from the buried portion of the stem.

Preserving And Storing Peppers

There are a lot of ways to preserve peppers. You can pickle them, which is nice, but a little limiting; pickled sweet peppers are good for an appetizer, but little else. Once you roast the peppers, however, things change. Roasted peppers are a delight. I use them as appetizers like the pickled peppers, but also in sauces, stews and simply draped over roasted or grilled meat.

Ruby King Recipes

Roasting brings out a sweet and charred flavor in this healthy veggie that’s hard to describe. It’s so unlike it’s flavor raw, it’s like an entirely different vegetable! Roasted bell peppers make a fantastic side dish, or use them as a filling for fajitas, topping for salads, filling for sandwiches, and more.

Pepper Nutrition

Ruby king peppers are very high in vitamin C, with a single one providing up to 169% of the RDI. Other vitamins and minerals in bell peppers include vitamin K1, vitamin E, vitamin A, folate, and potassium. And, they contain many healthy antioxidants, including capsanthin, violaxanthin, lutein, quercetin, and luteolin. These plant compounds are associated with many health benefits.
